Le Chai Perché, Ténéré 2023Hautes Apes, France Red Grenache Noir & Syrah purchased from the Gard and Luberon in South France. For the Grenache, half are destemmed while the other half are left as whole bunches and layers accordingly in a millefeuille style for 12 days before being pressed off into barrel and fiberglass. The Syrah is then all destemmed and macerated for 8 days and blended with the Grenache in fiberglass.
